PRIORITY VIOLATION-2-301.14, P: When to Wash----Employee handled raw chicken item then went to handle clean equipment and food items without changing gloves and washing hands. Employee was asked to wash hands and did so. Ensure that employees wash hands often enough during food preparation to prevent cross contamination. PRIORITY VIOLATION-2-301.12, P: Cleaning Procedure---Employee observed washing gloved hands in food prep sink without soap. Employee was instructed how to properly wash hands. Ensure that employees are properly washing hands and exposed arms. *Talked to managers about also educating employee about where to wash.

Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding-----Shell eggs-51-70F and blue cheese-54F in make line area in front of grill and in make line cooler. Manager was unsure of how long eggs had been in make line area and discarded-see embargo form. Manager stated that blue cheese was recently placed into unit and relocated to walk in cooler. Keep PHF/TCS foods in cold holding at 41F or below.

This establishment received a(n) D Grade and had 3 Priority, 0 Priority Foundation and 0 Core violations on this inspection. A pattern of non-compliance for foodborne illness risk factor violations #'s 6 and 20, 2-301.14 and 3-501.16 have been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge at the time of inspection. Failure to correct repeat violations may result in legal action. *Gave manager AMC class information. No County legal action will result from this inspection.
