PRIORITY VIOLATION-3-501.14, P: Cooling... Observed cooked beans in a deep cooking pot inside the walk in cooler with an internal temperature of between 54-57*F. Per the manager, the beans were cooked the day prior and that they were placed in the walk in cooler to cool. Instructed the manager to discard the food item. Proper cooling time was not adhered to. A cooling food item at 135*F shall be cooled to 41*F within 6 hours. Advised the manager to use the proper cooling methods, for example, separating food items into smaller portions or using ice as an ingredient.
