PRIORITY VIOLATION-3-501.14, P: Cooling Observed 6" deep pan of cooked white rice in walk-in cooler at 51* F. Per the person in charge, the item was made yesterday and was dated 12/13. Item was discarded.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding Observed several time/temperature control for safety (TCS) items in the sandwich line cooler at temperatures ranging from 50* F to 54* F. Items were embargoed. See embargo list. Also observed lettuce at 55* F, shredded cheddar cheese at 48* F, pasta salad at 53* F and cottage cheese at 48* F in the dinning room salad bar. Per manager, the items were placed in the salad bar an hour earlier. Items were moved to the walk in. The salad bar uses ice to maintain items. Recommended using metal pans and making sure pans are fully surrounded by ice to the product fill line to ensure temperature will be maintained at 41* F or below.

An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.
