Per person in charge food had all been in unit at least overnight. Ensure time/temperature control for safety foods are cold held at 41 degrees F or below. See embargo form. Cut cantaloupe in top of make table sitting in bowls not inside the cooling element of the unit. Employee moved melon to bottom of unit as it had been there less than 2 hours. Ensure time/temperature control for safety foods are maintained at 41 degrees F or below.

Priority Foundation-4-301.11, Pf: Cooling, Heating, and Holding Capacities-Equipment Walk-in refrigerator was iced up and was blowing out at 49 degrees F. Entire walk-in temperature was between 48-52 degrees. Permit was suspended and reopened at time of inspection because person in charge called maintenance person after temperature issue was found. The walk-in was blowing at ___ by the end of the inspection.
