PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness.. Chlorine based sanitizer in the in-use three compartment sink was tested to be at least 200 ppm. Please provide chlorine solution between 50-100 ppm. Manager corrected the solution and then the dishes were properly washed, rinsed and sanitized.
