PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding............In the pantry cooler, using a calibrated thermometer observed TCS foods holding above 41F including Ceasar dressing/55F, whipped cream/50F, goat cheese/48F, fresh mozzarella/51-68F, cut tomatoes/47F, sausage/47F, pepperoni/57F, salami/57F, cooked mushrooms/56F, cooked leeks/58F, hard boiled eggs/52F, cheese/53F, gold beets/56F, red beets/54F, cut romaine/55F, chopped salad mix/55F, creme fresh/53F, roasted corn/58F, bleu cheese/55F. Also observed portioned crab/53.5 and cream in carton/45F with product being in a double container. Maintain cold TCS foods at or below 41F. All foods were voluntarily discarded. Ice baths set up at the pantry cooler. Repair/replace the pantry cooler as needed.
