Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding---Observed multiple packages of raw pork and beef with internal temperatures ranging from 46F-53F. Person in charge stated they were packed yesterday. Discussed with person in charge that packaging process may be the cause of food remaining above 41F since packages are wrapped in plastic and cold air cannot get in. PIC stated he would monitor temperatures to ensure this would not occur again. In second display case, ham, cheddar cheese, swiss, cheese, and roast beef had internal temperatures of 44F. Person in charge informed he could not sell these items and removed them from the display case (see embargo form). Please ensure to keep cold foods cold at 41F or below.
