PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness --- Observed no detectable chlorine sanitizer in the final rinse of the low temperature warewashing machine. Manager called for service at time of inspection and was instructed to use the three compartment sink to do dishes until unit is fixed. Discussed using test strips to ensure proper chlorine sanitizer concentration of 50-100 ppm.

PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding --- Observed cooked hash browns on sheet tray partly stored on the flat top with internal temperature of 117'F for 30 minutes, per chef. Hash browns were reheated to 165'F at time of inspection. Hot TCS food must be held at 135'F or above. Discussed hot holding options (ex: steam table, flat top, etc) with manager.

An Active Managerial Control Intervention Plan visit was offered to the person in charge at the time of inspection. Failure to correct repeat violations may result in legal action.
