Person in charge removed gloves and washed hands correctly.

Vegetables should be checked for wholesomeness before being placed in the walk in refrigerator for use. Person in charge to discard box of green peppers.

PRIORITY VIOLATION-4-602.11, P: Equipment Food-Contact Surfaces and Utensils-Frequency. Observed bubble poker for pizza with heavy accumulation of pizza sauce on poker portion of the utensil. Per person in charge the poker was not cleaned the current day and was unsure the last time it was washed, rinsed, and sanitized. All utensils that are used for temperature safety foods throughout the day must be washed, rinsed, and sanitized every four hours. Employee brought poker to sink for proper cleaning.

Core-3-307.11, C: Miscellaneous Sources of Contamination. Observed uncooked lasagna noodles under a prep table and spices with no lid on the rack near the three compartment sink. Cover all food so that no contamination can occur.

Core-6-201.13, C: Floor and Wall Junctures, Coved, and Enclosed or Sealed. Missing electrical covers and coved base detached or missing on walls along perimeter of kitchen. Holes in wall under hand washing sink with duct tape over it. Fix drywall with permanent, smooth finish. Install cove base along the wall in the main kitchen area. 8th Consecutive violation. Core-6-501.12, C: Cleaning, Frequency and Restrictions. Observed dust accumulation on the ceiling tires in front of the pizza oven. Dust also on some of the shelving units near the fryer and stuck on the sprinklers. Clean and maintain clean.

This establishment is not participating in the award program at this time and had 3 Priority, 0 Priority Foundation and 4 Core Violations on this inspection. No County legal action will result from this inspection. Repeat core violations noted on inspection. Currently, establishment cooks marinara sauce, meat sauce, chicken wings and lasagna. Some of these food items are cooled and re-heated for hot holding or maintained in cold holding until ordered.
