Per PIC jalapenos had been cooked hour prior. Jalapenos were placed directly on stove top to reheat. Observed cooked beans in pot next to hot holding unit at 110*F. Per PIC beans were off of stove because they didn't want them to burn. Instructed PIC that all cooked foods must be kept at 135*F or above or in process of cooling down in walk in on thinner trays. Instructed PIC to reheat beans to 165*F due to PIC stating that beans had been on countertop for 1 hour and to ensure that beans are kept at the 135*F or above.***Repeated Violation****
