Open bag of raw chicken being stored on top of box of raw beef. No evidence of cross contamination, had PIC move chicken to a lower shelf and gave food storage handout. Please ensure raw animal foods are separated appropriately to prevent cross contamination.

PRIORITY VIOLATION-4-602.11, P: Equipment Food-Contact Surfaces and Utensils-Frequency... Knives on magnet strip next to grill were visibly soiled with dried food. Cook said they were used by the last shift and was unsure of when they had last been cleaned, dried bits were hardened and looked quite old. Had cook wash, rinse and sanitize knives before use. Please ensure in-use utensils for TCS foods are cleaned at least every 4 hours. PRIORITY VIOLATION-4-702.11, P: Cleaned and Sanitized Before Use After Cleaning... Observed cook cleaning soiled knives in 3 compartment sink, cook was washing and rinsing without sanitizing before returning utensils to cooking area. Cook stated that he puts bleach in his cleaning solution, solution tested 0ppm with strips. Had cook make a sanitizer solution and re-wash knives before returning them to cooking area. Please ensure all food contact surfaces and utensils are properly sanitized before use after cleaning.

PRIORITY VIOLATION-3-501.14, P: Cooling... Large plastic container of cooked chicken found at 72*F in walk-in cooler. PIC stated that it had cooked almost 3 hours prior, had PIC discard. Please ensure all TCS foods are cooled from 135*F to 70*F within 2 hours and cooled from 70*F to 41*F within an additional 4 hours to prevent bacteria growth.

PRIORITY VIOLATION-7-207.11 (B), P: Restriction and Storage-Medicines; Storage & labeling... Multiple bottles of aspirin and other bottled pills/medications were found being stored on a ledge above open boxes of chips. Had PIC move all medicines to office, please ensure all medications are stored away from food to prevent contamination. Priority Foundation-7-202.11, Pf: Restriction-Presence and Use... Found 2 cans of "Raid" and 1 can of ant and roach killer in storage area by back door. Had PIC put items in office to take home. Please ensure all pest control measures are handled by a certified pest control professional to prevent pesticide contamination in kitchen areas. Priority Foundation-7-102.11, Pf: Common Name-Working Containers... Found 2 unlabeled spray bottles under front counter, PIC stated that they were just water. When the bottles were opened and smelled it was decided they were not water. Had PIC identify chemicals and label bottles. Please ensure all cleaning chemicals and spray bottles are properly labeled to prevent confusion.
