Stopped employee and had employee remove/ discard gloves and properly wash hands before placing new gloves and continuing food service. Explained the importance of properly washing hands when contaminated.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed red and green salsa located at food prep table. Per person in charge, the salsa were made earlier in the day, the chilies were heated inorder to make the salsa. The green salsa had an internal temperature measured at 76dF and the red salsa had an internal temperature measured at 73dF. All cold holding must be <41dF at all times. Items were discarded.

Core-4-202.18, C: Ventilation Hood Systems, Filters. Observed hood system missing a filter causing a void and allowing exhaust to be escaped without being filtered. Replace so that hood system does not have a void in filtration. Core-4-204.11, C: Ventilation Hood Systems, Drip Prevention. The hood system does not have a drip prevention cup. Replace so that all grease can be confined to one location.

Mobile food regulation compliance
~Chap. 8, Sec. 3, Reg. 5e; Mobile food establishment is not reporting daily to an approved commissary for supplies, food storage, vehicle, and equipment cleaning, waste disposal and service operations. When asked person in charge when they report to commissary to dump waste, person in charge mentioned that they go early morning. Noted that there was a 5-7 foot pvc pipe with ball valve that is located directly under waste water discharge and goes to front of mobile food unit (hitch). The pip is pointed toward the street and sidewalk. Told person in charge that unit must go to commissary to dump waste . ~MCEHC Chap. 8, Sec. 3, Reg. 5f; Mobile food establishment does not have current commissary agreement on file and/or has maintained a log of visits to the approved commissary. When asking for commissary visits log, the person in charge provided a log that is not up to date. The last date noted on log was February/ 2017. The mobile food unit must report to commissary every day mobile food unit works in order to obtain fresh water and to dump waste.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
