Proper hot holding temperatures
PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding.....Observed cooked corn dogs in pan with no lid measuring at 125*F, per manager corn dogs were just prepared and fried and were going to be placed into the cold holding unit for cooling. Informed manager no cooling was allowed on mobile food units and that foods need to be held either at cold or hot holding. Manager reheated corn dogs and placed on flat grill in pan covered with foil to maintain hot holding of 135*F and higher.

PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria.....Observed chlorine sanitizer concentration in three compartment sink with utensils in it above 150 ppm. Manager was using the wrong test strips to test concentration, provided manager with proper test strips and corrected sanitizer in three compartment sink to measure between 50 ppm to 100 ppm.
