PRIORITY VIOLATION-3-301.11, P: Preventing Contamination from Hands; Bare Hand Contact with Ready to Eat Foods----Employee on cook line observed handling multiple pieces of ham for breakfast sandwiches with bare hands. **(All ham was being removed from hot holding unit to be placed on sandwiches.) Employee was asked to discard all ready to eat food that was touched with bare hands, properly wash hands, and put on gloves. Ensure that employees are limiting contamination of ready to eat foods by wearing gloves or by other approved methods.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding----Prepped salads, cut lettuce, and shredded lettuce-47-49F in reach in cooler at the end of the make line. PIC stated that all items had been recently placed into unit within last three hours and relocated to walk in cooler. (*Walk in cooler temp was below 41F) Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temp of reach in cooler was 45-50F. PIC removed food items and stated that unit would be scheduled for maintenance/repair.

A pattern of non-compliance is developing for Priority violation # 20, 3-501.16, which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. No County legal action will result from this inspection.
