OC Inspection - E&D Class 4 This inspection was conducted with the owner. A PDF copy of this inspection report was emailed to Sabah M. at the time of this inspection. This facility is not currently in operation. No county legal action will result from this inspection. Correct the following prior to final permit approval; 1. There is currently only a 30 gallon water heater installed. Provide a minimum 50 gallon water heater. 2. Provide a dedicated hand sink in the back kitchen area. This sink must have hot and cold water and a drain pipe that does not join the food prep sink or three compartment sink. 3. Provide an NSF approved food prep sink with separate hot and cold water valves and a separate drain pipe that empties into the floor sink with a minimum 1 in. air-gap. 4. The hot and cold water valves on the three compartment sink do not turn off. Repair the three compartment sink faucet to be fully functional and ensure that the hot and cold valves can be completely shut off. 5. Provide a P-trap between the two directly connected compartments of the three compartment sink and the above ground grease trap. 6. There is an open vent pipe connected to the three compartment sink drain pipe that empties into the grease trap. This open vent pipe must be capped off or a Studor Vent must be properly installed. 7. The atmospheric vacuum breaker and hot water valve on the mop sink faucet are both broken and leaking. Repair each of these to be fully functional. 8. The drain pipes to and from the walk-in unit, condensate sump pump must be hard pipe such as PVC or copper instead of the plastic flex pipe that is currently installed above the walk-in units. Also, the condensate from these units and sump pump must have an indirect drain connection to a floor sink or to the mop sink basin with a minimum 1 in. air-gap. 9. Provide a certified, RPZ backflow prevention device for the water supply to the soda fountain carbonator. 10. Repair the walk-in freezer to be fully functional. 11. Trim off and reseal the space in between the wall in the corner to the right of the cold tables. 12. Clean the walls throughout the back kitchen area. Repair and seal holes and damaged areas. Do not paint the FRP. 13. Remove the foam from around the clean out cover in the mop sink area. 14. Provide cutting boards for the front service area that are smooth and easily cleanable. 15. The floor and cove base in the back kitchen area is severely damaged and deteriorated. Repair the floor and cove base in the back area to be smooth, non-absorbent and easily cleanable.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
