Onsite visit at Stradabella Custom Mobile Kitchens and walk through conducted for the F\fixed establishment trailer that will be placed at The Corral at White Tank Ranch.
The following items were discussed:
1). Self closing magnetic insect screens can be used at the exterior doors in lieu of a hard construction doors. If screen doors are used all year long the exterior door does not need to be self closing. If the screens are tucked in in the summer the exterior doors too will need to be made self closing.
2). The two pass through windows will be modified to slide down to a close position by gravity only.
3). All penetrations through the floor will be sealed and finished out cleanable, gas, waste and water lines. The spare opening for electric under the back counter will be abandoned and sealed.
4). The front and side of the sink counter will be closed off with removable panels. There are at least 4 cavities under the counter that can be flashed.
5). The drain of the prep sink will be cut in a 45 degree angle so the start of the cut starts above the flood rim. See if you can bring the cut in at an inch above the hub drain flood rim. This way you create a valid air gap.
6). Please install a hub drain in a similar manner for the third compartment of the three compartment sink.
7). The back splash and side splash of the flat top grills will be raised to avoid grease buildup behind the grills.
8). The fryer shield will be sealed to the flat top grill side splash.
9). Where open, silicone the back splashes of the work counters to the wall.
10). Spec sheets for the water heater will be provided defining the flow and temperature rise specifications.
No County legal action will result from this inspection.
