Core-3-304.12 , C: In-Use Utensils, Between-Use Storage Observed spreading knives being stored between use, in seam between small prep-style refrigerator and prep table at sandwich prep area. Advised person in charge (PIC) that in-use utensils shall be stored in a manner which does not contaminate the utensil between use. PIC moved the knives to the 3-compartment sink to be washed, rinsed, and sanitized. PIC stored the knives in a clean container at sandwich prep area.
