For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Cooked corn, cooked mixed vegetables, deli meats, cheese, butter and other TCS food items found in fridge with internal temperatures of 49-51*F, verified with PIC's and inspector's probe thermometers. The fridge was last checked at 11:45 AM today and was at 36*F ambient temperature. Ambient temperature during inspection was 54*F. PIC moved the food items to freezer for cooling and temporary cold holding. Other TCS food items that couldn't fit in the freezer will be monitored and discarded at 3:45 PM if they do not reach an internal temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below.

The cooler may have had multiple hot food items placed in the cooler after lunch time which could have caused the ambient temperature to rise. However, the cooler did not show any signs of cooling to a lower temperature during inspection. Please have this cooler repaired/replaced prior to re-inspection within 10 days. If cooler is unable to maintain TCS food at 41*F or below, the facility will have to adopt alternative means to provide TCS food items such as delivery for single meal periods, serve from the freezer by thawing, or provide non-TCS foods only.

Please reattach the sink to the wall and re-caulk the space between to provide a smooth and easily cleanable surface. Wall near prep sink is beginning to show signs of erosion. Please resurface the wall to provide a durable, smooth, non-absorbent, and easily cleanable surface.
