Low chemical concentration reading (less than 50 ppm) for chemical sanitizer (quaternary ammonia) for mechanical dishwashing machine. Food contact equipment must be properly sanitized per manufacturer's recommendation for chemical sanitizer. Upon discussion with PIC, incorrect chemical sanitizer was being used for equipment. Use proper chemicals for equipment. --------- PIC will set up three compartment sink for manual ware washing at time of inspection.
