PIC stated the food was cooked the day before and was put in the walk-in to be cooled. Walk-in unit had an ambient temperature of 40'F. Food was embargoed as it has been cooling for longer than 6 hours. TCS food items must be cooled from 135'F to 70'F in the first two hours and 70'F to 41'F in the four hours that follow for a total of 6 hours. PIC discarded food item at time of inspection. Discussed using uncovered shallow metal pans for better air flow in order to cool food down within the time parameters.
