For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding.--- At time of inspection, observed hot dogs, stored in reach-in hot boxes, with an internal temperature of 109-125F. Logs provided by PIC showed the hot dogs were re-heated above 165F, before being stored in the hot boxes. As per PIC, the hot dogs have been in the hot boxes for less than 2 hours prior to inspection. Had PIC turn up reach-in hot boxes. All TCS must be maintained at 135F or higher for hot holding.
