PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed that the sanitizer in the 3 comp sink test at less than 100ppm. Sanitizer concentration is required to be between 200ppm and 400ppm to properly sanitize wares. Upon investigation, observed that the sanitizer source bottle was nearly empty and was not drawing up sanitizer as the feed hose was above the level of the sanitizer in the bottle. The PIC replaced the sanitizer bottle with a full bottle but after running for several minutes the sanitizer in the 3 comp sink tested below 200ppm. The kitchen will sanitize wares in the mechanical dishwasher until the chemical dispenser at the 3 comp sink is repaired. PIC stated they would call for service at the time of this inspection.

Core-6-501.19, C: Closing Toilet Room Doors Observed that the staff restroom door, which opens directly into the kitchen was propped open with a door stop. Except during cleaning and maintenance operations, toilet room doors as shall be kept closed The PIC removed the door stop at the time of this inspection and will review rules with staff and volunteers.
