Inspection Comments

This establishment is on the Cutting Edge of food safety and was awarded an “A+” grade. No County legal action will result from this inspection. Inspection report will be emailed Observed the high temp dishwasher not reaching proper ware washing temperature of 171° F. Kitchen area has a three compartment sink with quaternary sanitizer and is able to properly ware wash dishes and utensils in the kitchen area. Person in charge had stated that they will put in a work order for the high temp dishwasher to be repaired as soon as possible and had stated that they will only use the three compartment sink for ware washing needs. Observed the quaternary sanitizer for the three compartment sink not properly dispensing the right amount. Person in charge had stated that they currently mix the sanitizer with water in order to achieve the proper sanitization level of 150 ppm - 400 ppm. Person in charge had stated that they will place a work order for the sanitizer dispenser so that it is properly dispensing the correct amount of sanitization. Observed various equipment, such as meat slicers and bread slicers, not in use with built up debris on the blades. Discussed with person in charge on educating students so they are aware on proper ware washing policies and procedures, and if the equipment is not in use then properly storing it to where it is kept clean sight to touch. Discussed integrated pest control with person in charge. Person in charge had stated that they will place in a work order for pest control for the kitchen to deter pests. Observed various walk ins with that are leaking and not in use. Person in charge had stated that they had placed a work order for the walk in to repair the condenser units. Kitchen has ample refrigeration to properly function and to receive food. Had also observed upright fridge 5 and 2 with internal temperatures ranging from 40° F-43° F. Discussed with person in charge on ideal refrigeration temperature of 36° F-38° F in order to have the food to have a consistent temperature of 41° F. Person in charge had stated that they will put in a work order for the upright fridges. Kitchen has ample refrigeration to where they can properly operate.
