Observed 0 ppm chlorine sanitizer in the dishwasher in the ware-washing area. PIC primed multiple times at 0 ppm. Advised PIC proper chlorine concentration should be between 50-100 ppm to ensure dishes are properly disinfected to prevent the spread of pathogens. 3 compartment sink will be set up to wash, rinse, and sanitize. Please have the unit serviced by a technician prior to reinspection. Sanitizer logs recommended.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed missing tiles in produce walk-in where water is building up. This is considered not easily cleanable and the standing water could then grow mold. Please have the tiles replaced prior to next routine inspection. Observed produce walk-in has a very large amount of condensation that is dripping from the fans. This is causing the pooling of water in the tiles and could contaminate the food. Please have this serviced by a technician and corrected by next routine inspection.

A pattern of non-compliance is developing for Priority violation # [14 ], [4-501.114], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Discussed employee illness policy and date-marking. Inspection rights discussed with Edgar A. Report emailed to PIC. No County legal action will result from this inspection. Failure to correct repeat violations may result in legal action.
