Food-contact surfaces: cleaned & sanitized
PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical

Observed mechanical warewashing machine run several wash cycles. Each cycle produced a
concentration of 0ppm chlorine on test strip. The concentrated Chlorine (without water)
tested with strips read at 25-50 ppm. Person in charge suspects the bleach in house was
old. For proper sanitization, the chlorine solution should reach a concentration of 50-
100 ppm. Person in charge submitted a service request for warewashing machine and placed
an order for new chlorine. Observed quat sanitizer solution mixed with water with intent
to clean surface areas. Solution was tested at 500ppm. Quat solution should be at 150-400
ppm. Person in charge to follow proper procedures for creating sanitizing solution.
Establishment has a 3-compartment sink and is able to wash, rinse and sanitize food
contact surfaces in the meantime.
