>>>Observed food particles in two Kitchen Aid blenders in the dry storage and a greasy grill
scrape under the hot top. Person in charge (PIC) stated these items were stored as clean.
Advised PIC that equipment food contact surfaces and utensils shall be clean to sight and
touch. PIC will have cleaning staff clean items. Items were moved to the dish washing
station to be cleaned.

>>>Observed two snap-style rat traps in the kitchen; one by the back door and the other next
to the meal-prep station. Advised PIC that if pest are found, approved means of pest control
are used. PIC removed traps and will replace with approved traps that are covered.

>>>Observed standing water on the floor under the food-prep station. Advised PIC that floors
shall be free of standing water and the physical facility is cleaned as frequently as
necessary. PIC will have cleaning crew come in to clean the floors. Strategized with PIC by
demonstrating the root cause of the issue being excess mop water used in cleaning
procedures.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced
food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance
with Cutting Edge program requirements receive an “A” grade.
