Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed areas under dry storage area and under cabinets in the pizza kitchen area with non food items and old food items, such as pasta. Manager stated they get to all areas, especially corners, when cleaning. Discussed that physical facility is not cleaned as frequently as necessary to reduce unnecessary non food/ food items. Cleaning should occur when floors and coverings have spoilage buildup (includes duckboards and mats) and if any walls or ceilings in any room (including walk-in coolers) have dirt buildup. Cleaning should also be applied to attached equipment that can be dirty (vent covers, switches, light fixtures, fans, etc.).
