Observed employee wash pizza slicer in the sanitizing bucket located in the pizza cove and place it on the table for future use. Discussed with employee and person in charge on proper ware washing policies and procedure. Employee had moved the pizza slicer to the three compartment sink to wash, rinse, sanitize. Training shall occur to verify that employees are aware on proper ware washing policies and procedures.

Observed spicy chicken patties in the walk in refrigerator with internal temperatures of 46°F. Other items in the walk in refrigerator had internal temperatures of 40°F. Person in charge had stated that the chicken patties had been placed in the walk in the day prior to inspection. The spicy chicken patties had been voluntarily discarded. All TCS food to be maintained at 41°F or less at all times. Training shall occur to verify that employees are aware on proper cold holding temperatures.
