Core-3-304.14, C: Wiping Cloths, Use Limitation Observed sanitizer cloth buckets with 0ppm of quat sanitizer used by establishment. Upon inquiring at sanitizer dispenser, mechanism was not dispensing at proper levels as air bubbles were observed throughout sanitizer line. PIC was able to move line and quat sanitizer was observed at 300ppm. Had PIC change out cloth buckets. Quat sanitizer must be between 150-400ppm for proper sanitation.

Priority Foundation-5-103.11, Pf: Capacity-Quantity and Availability Observed water at sinks throughout establishment to be reaching 73-74*F. Hot water must be available at all sinks for operation. Observed high temp dishwasher at 168*F. Hand sinks must be at least 100*F, sanitizer mechanical dishwashers must be at least 120*F, high temp dishwashers must be at least 140*F, and all other sinks must be at least 110*F. PIC stated due to maintenance in kitchen, they believe fans blew out the pilot light of the water heater. PIC called for expedited plumbing service. 24-hour re-inspection will be conducted. Discussed MCESD’s policy regarding permit suspension for no hot water after 24 hours.

Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained Observed leak under high temp dishwasher. Also observed leak from head of right faucet at three compartment sink and accumulation of calcium rendering the area not smooth nor easily cleanable. Repair/replace leaks and faucet and maintain in good repair.
