PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. >>> Observed individual milk and chocolate milk cartons with internal temperature of 49*F in grab & go milk and juice refrigeration unit at the beginning of the food service line. Except during preparation, cooking, cooling, or when time is used as a control all TCS (time/temperature controlled for safety) food to be maintained at 41°F or less. Per Person in Charge (PIC), milk was placed in unit at 9:30am (less than 4 hours prior). PIC moved milk to walk-in refrigerator to rapidly cool to 41*F or below. Ambient temperature of refrigeration unit 45.3*F when taken with inspector min/max irreversible thermometer. No cold holding temperature for unit recorded since 9/19 on establishment temperature log. Discussed with PIC importance of proper cold holding for TCS foods. PIC stated a new milk & juice refrigerator has been ordered for replacement.
