For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding. ------Observed cooked beef burger patties that were being prepared and wrapped at a temperature of 95*F on the prep table in front of the kitchen. Beef patties that came out of the oven measured 170*F with a thermometer, but sit out while being prepared and wrapped. Burgers are placed in hot hold unit after wrapping. The unit measured 140*F with the thermometer; however, the burgers measured 120*F. Per employee, the kitchen is understaffed and struggles to wrap patties in a timely manner, so the patties cool by the time they are done. Patties were reheated to 165*F before being rewrapped and placed back on the warming rack. Discussed with manager the importance of keeping hot foods at temperatures above 135*F and warming burgers before they are placed in the hot holding unit.
