For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources....In the dining area salsa (tomato) and in-house pickled eggs were being held at room temperature with internal temperatures ranging from 50*F-56*F. The person in charge (PIC) stated those items are left there for clients to eat and are discarded within 4 hours. There was no policy stating those items are being held as time as control. Provided the 4-hour time as a control guidance document. Please create a policy and implement documentation prior to next routine inspection.

Informed the person in charge (PIC) that pickling eggs to extend shelf life or render non-TCS will require a variance from the County. The PIC discarded the pickled eggs at the time of inspection. The person in charge stated they will not proceed with specialized process and will follow FDA Food Code parameters such as proper cooking, cooling, cold holding, and use product within 7 days the prep/cook date.

Inspection rights were verbally acknowledged with Michael L. Inspection report was emailed and received by Michael L. at the time of inspection. Of note: Discussed fly activity in the outside of the facility. Please ensure flies in the outside are greatly reduced to prevent entry into the kitchen.
