The person in charge (PIC) moved the eggs to the bottom of the refrigerator at the time of inspection. Please ensure raw meats and proteins are kept below and way from ready-to-eat products to prevent cross contamination. Reviewed and provided proper cold holding food separation handout.

In the walk-in cooler cooked tomato soup, ham and cheese sandwiches, and cooked ribs were dated 4/18/22. Food items were held for more than 7 days without discarding. The food items were embargoed and voluntarily discarded by the person in charge (PIC) at the time of inspection. Please ensure food items are not kept for more than 7 days in the refrigerator after being opened/prepared/cut/cooked. Provided date marking educational sticker to person in charge.
