A raw steak was stored in the top shelf of the kitchen reach-in refrigerator above ready-to-eat foods such as dressings and cheese. The person in charge (PIC) removed the raw meat from the refrigerator at the time of inspection. Please ensure raw food are separated below and away from ready-to-eat foods to prevent cross contamination.

Time as a public health control: procedures & record
Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation. Observed leftover chicken and rice food plates from the lunch period being were held under time as a control in the Cambro unit in the back of the establishment. The PIC stated the food plates are placed in the unit around 12:30 and are discarded by 3:00pm. No policy or logs were present at the time of inspection. Informed the PIC to document the start time and end time for those products and ensure they are discarded within 4 hours. The establishment already has a time a control procedures for the snacks/fruits salads in the dinning area and the PIC stated they will do the same with the leftover food plates. Please ensure time as control policy is present at all times and ensure logs are filled out properly.

This establishment received a(n) B Grade and had 1 Priority, 1 Priority Foundation and 0 Core violations on this inspection. No County legal action will result from this inspection. Inspection report was emailed and received by the PIC at the time of inspection. Reviewed self-service operations and use and disposition of donated food items with the PIC. A pattern of non-compliance is developing for Priority violation # [ 13], [3-302.11] and #[22], [3-501.19], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
