Observed breakfast and lunch leftovers with internal temperatures of 78*F in the cambro hot box such as cooked eggs, pizza, french toast (egg), and sausages. The person in charge (PIC) verified the food temperatures. Per PIC the food items have been in the unit for more than 2 hours. All food items were embargoed and voluntarily discarded by the PIC at the time of inspection. Informed the PIC to ensure leftover foods are kept hot above 135*F after the each meal period or they are placed in the walk-in cooler to cool down properly.

PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition. Operator-Resources. In the walk-in cooler, a large box had several home chef pre-cooked meals with the use-by- dates of 11/11/23 such as pasta with pepperoni, grilled chicken with mashed potatoes, Ricotta and spinach ravioli, and cheese beef taco pasta. Also, observed the following commercially packaged meals with the following use-by-dates: Carne asada kit (cooked) 11/11/23, chicken stir fry (cooked)11/11/23, penne pasta (cooked) 11/11/23, Ham sandwich 11/10/23, chicken wrap 11/11/23, and cooked chicken strips 11/11/23. All food items were embargoed and voluntarily discarded by the PIC at the time of inspection. Instructed the PIC the properly label and sort donated food items to ensure they are in good condition and within expiration dates.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
