Thermometer was calibrated on site. Per person in charge (PIC), the milk had been delivered on Friday but measured below 41°F prior to inspection. Temperature logs were verified on site. Other food items were prepped or thawed this morning and were moved into the walk-in freezer at time of inspection to rapidly cool. Cartons of milk were picked up by the district office to store in their walk-in refrigerator until the unit is repaired. Reviewed cold holding requirements with the PIC.

Per PIC, they had received various deliveries today and were constantly opening the door during lunch. An accumulation of ice was also seen on the back side of the fan unit. PIC notified management to contact a repair technician while on site. Discussed cold holding equipment requirements with the manager. Re-inspection will take place within 48 hours to verify the unit is holding at or below 41°F.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment --Door to the walk-in freezer had a build up of ice in the doorway. Per PIC, they normally remove the ice daily but it always comes back. The ice build up doesn't allow the door to close all the way. Discussed having the repair technician adjust the unit so that the door can be fully closed.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
