Advisory. On-site courtesy advisory visit. Met with Gilbert Gonzales. Reviewed and discussed upgrades to the mechanical systems for the existing walk-in cooler/freezer units. Ok to utilize the walk-in units. Recommendations: 1)Seal any cracks in the walk-in units concrete flooring and seal/cove the curbing inside the units. 2)Seal and provide new metal base on the exterior of the walk-in units in locations where its in poor repair. 3)Seal any gaps, cracks, and penetrations. 4)Label the walk-in condensate drain lines and direction of flow. 5)Ensure minimum 1-inch air gap off drain line at service sink. 6)Ensure accurate thermometers are provided. No County legal action will result from this inspection.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
