PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. ====Observed hot holding soup inside soup kettle with internal temperature of 113-114*F. Per employee the soup was put into soup kettle at 10am. Time of inspection is at 12:30pm. Notified Person In Charge (PIC). PIC confirmed internal temperatures. Directed employee to discard the improperly hot holding soup. Power outlet to the unit is not functional. Recommend not using hot holding unit. =======Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. No County legal action will result from this inspection. Calibrated thermometers. Recommend: replacing/repairing high temperature dish machine; removing old ice machine. Reviewed and discussed: hot holding procedures; reheating procedures. Emailed copy of inspection report to the establishment.
