PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.--- Observed 15 small cartons of milk and 15 yogurts located in north vertical refrigerator at Sarah's Place having internal temperatures of 50 deg.F. Person in charge stated all items have only been in unit for 2 hours and were moved to second vertical refrigerator located south service at Sarah's Place to rapidly cool down to 40 deg.F by the end of inspection. Person in charge stated they will put items in South vertical refrigerator until North Vertical refrigerator is holding proper temperature at 41 deg.F or below. Ensure all cold holding of TCS foods is at 41 deg.F or below at all times.
