PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. On hot holding line observed cooked rice holding at 128*F. Per PIC rice had been made and placed into unit about 40 minutes previous. Rice was re-heated to 165*F prior to placing back into hot holding at 135*F. Also on hot line observed a container of cooked potatoes and a container of cooked ground beef holding between 95-119*F. Per PIC items had been placed into unit less than an hour previous. Items were re-heated to 165*F prior to placing back into hot holding at 135*F. Establishment has adequate alternative hot holding equipment to continue operation; it could not be determined why part of the hot holding unit was not working and PIC may wish to have a service technician look at unit.

Core-3-307.11, C: Miscellaneous Sources of Contamination- Observed many pots and pans being pre-washed and dried in outdoor mop sink area (floor drain and hose being used). Educated PIC about keeping all warewashing indoors and centralized to the three compartment sink area. Dishes were moved back indoors.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability - Flooring throughout kitchen is beginning to deteriorate and become uneven. Cracks are visible and concrete is showing through. Please plan to re-surface flooring so that it is smooth, durable, and easily cleanable. Core-6-501.114, C: Maintaining Premises, Unnecessary Items and Litter- Ice machine has not been in working order for over a year, per PIC. Please remove broken equipment.

PIC will ensure that one person with a CFM is on site during operational hours. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
