Inspection Comments

At time of re-inspection (scheduled earlier in the day), inspector was informed that walk-in cooler was not working properly before entering kitchen. Ambient temperature rose above 55*F. Per person in charge, walk in cooler started to malfunction less than an hour prior to arrival at establishment. PIC already called for a work order. Discussed with PIC to cool down food with ice baths and/or move to colder reach in refrigerators or freezers until the walk in cooler is fixed. Inspector temped food and helped decide what to do with the food while walk in was worked on. Foods were moved to other refrigerators, ice baths, and freezers to cool and maintain temperature t 41*F. Some foods were reheated to 165*F to use for immediate service, while others were put in functioning coolers holding at 40*F or below. Discussed using time a time as a control policy requirements. All TCS foods that remain in the walk in will be discarded by 5pm (4 hours from time walk in went down). Maintenance arrived onsite before end of re-inspection. Maintenance is actively working on walk in issue. No County legal action will result from this inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
