PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. - Observed container of shredded chicken and container of shredded beef on top of metal container on cook top at 99 to 120 deg F. Per kitchen employee he had placed items on top of container 1 hour prior. Kitchen employee reheated food to 165 deg F and placed on cooktop in order to allow for proper hot holding. Time/Temperature Control for Safety food must be hot held at 135 deg F or above. Core-6-501.12, C: Cleaning, Frequency and Restrictions- Observed accumulation of food debris and grease in back kitchen walls by mixer, in dishwashing area, underneath reach-in equipment and on back walls and floors of bar area. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
