Observed a pan of sliced tomatoes in one of the prep coolers at 53 Deg. F. The tomatoes were over filled and per the operator were made within the last two hours. The tomatoes were moved to the walk-in for rapid cooling at the time of inspection. Observed a 6" + deep container of cheese sauce at 47 Deg. F. in the walk-in. Per operator it was just placed into the container with-in the last hour. Be sure to check the holding temperatures of products prior to putting them in containers that are over 4" deep Be sure to cool all Time, Temperature,for Safety Foods in the walk-in to 41 Deg. Prior to placing in a holding unit.
