Person in charge placed the chorizo on the bottom rack. Discussed the importance of storing raw food items below RTE items in order to prevent cross contamination.

Person in charge stated they have been in the fridge for a couple of days. Had person in charge discard eggs and made sure the unit was working. Discussed the importance of keeping time/temperature control for safety food such as eggs in a temperature of 41*F or below to reduce bacterial growth.

Discussed the importance of clearing the area up and not storing items not necessary for the establishment to prevent harboring pest.
