Observed yogurt, hard boiled eggs, breakfast sausage and ham sandwiches, tuna, egg salad and turkey sandwiches, Coby cheese snack plates, rib sandwiches, and sausage biscuits cold holding at an internal temperature of 46-53 deg F in a reach in unit that was holding >41 deg F. Manager informed the food items had been cold holding in unit >4 hours and removed from unit to discard. TCS foods held must maintain temperature of <41 deg F at all times.

Observed front reach in unit holding temperate 47.1 deg F (according to the min/max thermometer) and maintaining TCS foods above 41 deg F. There are other units in establishment for cold holding unit repairs are completed. Will re-inspect.
