Employee stated that ranch had been used to portion into to-go cups earlier in the day after the lunch rush. Lid was removed at the time of inspection. During food preparation, TCS foods may increase in temperature above 41 *F. When returning these foods to refrigeration, allow them to cool uncovered with a depth of 4 inches or less to ensure they cool down to 41 *F within 4 hours.
