Person in charge stated they had been cooked and placed in unit to cool the previous night. Product was embargoed and person in charge discarded at the time of inspection. Observed container of cooked chicken wings holding between 56-60 *F in single-door reach-in unit in storage area. Person in charge stated that wings were cooked and placed in unit to cool the previous night. Product was embargoed and discarded at the time of inspection. No cooling logs available to verify 2-step cooling procedure. Discussed proper cooling methods with person in charge and provided handout and log at the time of inspection.

TCS foods were removed from unit (See violation #20). Person in charge will have unit serviced to hold below 41 *F prior to use for storing TCS foods.
