Observed raw chicken, raw hamburger patties, house made ranch, and cooked potatoes holding between 51-54 F in prep table. Per person in charge items were placed there over 4 hours prior, items were discarded. Discussed with person in charge proper cold holding temperatures.

Observed fridge closest to prep table in prep area reading at 50 F. Also observed single door fridge closest to office holding 54 F. Discussed with PIC cooler needs to be cooler than 41 F to keep TCS food items in temperature. Reach in cooler must be repaired by re-inspection. Re-inspection scheduled for 11/17.

Core-2-102.12(A), C: Certified Food Protection Manager No certified food manager on present at time of inspection. Notified person in charge of current requirements for certified manager and updated requirements for 2017 FDA food code. Make sure that someone present during hours of operation is a certified food protection manager. No County legal action will result from this inspection. Report sent by email.
