Observed opened container of marinara sauce in prep refrigerator with a open date of 6/19 on container. As per the person in charge the date marked was the date opened. Temperature control for safety foods must be used within 7 days of opening. Person in charge discarded remaining sauce. Advised person on charge to freeze excess marinara that cannot be used in 7 days.
