Observed PIC wash hands at hand washing sink prior to food production at time of inspection.

PRIORITY VIOLATION-3-701.11, P: Discarding or Reconditioning Unsafe, Adulterated, or Contaminated. PIC took embargoed food items (grilled chicken and hot dogs) that had datemarking that exceeded parameters and was told to discard and placed food in bottom of beer glass reach in unit at bar. Inspector found embargoed food items during inspection and questioned PIC. Inspector had already instructed PIC to discard food. Immediately advised manager that all embargoed food items can’t served to customers. PIC discarded food and food placed on embargo at time of inspection.

PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition. The following TCS foods had datemarking that exceeded parameters: Two containers of grilled chicken (10/16), two containers of open hot dogs (10/16). Container of cut lettuce and container of another container of grilled chicken and hot dogs did not have datemarking. Discussed datemarking parameters with manager and Person in charge (PIC). Instructed PIC to discard food and food placed on embargo at time of inspection.

Instructed manager that the soda gun should be washed, rinsed and sanitized and allowed to air dry. The soda gun should then be stored as clean in the soda gun holder when in-use. Store in-use soda gun properly.

This establishment received a D Grade and had 3 Priority, 1 Priority Foundation and 4 Core violations on this inspection. Discussed continued training of PIC in food safety knowledge-when to wash, and datemarking. No County legal action will result from this inspection.
